iTunes and Quicktime Player for me too. VLC player on occasion if there's a problematic file, although plugins such as Perian and the Flip4Mac Windows Media plugin pretty much make most things work.
MM has some really great features for managing tags and file structures, but I'm not completely sold on the interface. I've been toying with Foobar2000, also.

I hear many good things about winamp but the last time i ever used it was in 1998 when i got it with a demo Cd and never since. (I remember it because it was my first computer and had just got it then...). I should give it a try me think ... sometime .
I use the one true media player, Amarok! It's the best audio player I've seen yet, it combines a good interface with a lot of functionality, and that all while keeping it running smoothly. It's got support for podcasts, smart playlists, visualisations, automatic download of lyrics, a tab to see the Wikipedia information of an artist, built-in Last.fm support, and plugins for all the rest.
Currently, it only works on Linux, but Amarok 2.0, the next version, will probably work on Windows too. Furthermore, the user interface will be completely redesigned in that version. I suspect that then, Amarok will become the most used audio player!
When I used Windows, I used foobar2000. Absolutely the best lightweight player available - the memory footprint is almost nonexistent and the sound output is superior to anything else available.
And when I used Ubuntu, I used Amarok. But I never really found anything that stood above the rest there.
Songbird has a lot of potential, but the development seems kind of slow.

Either a Mac evangelist, or... a zombie?
I kid. I am an iTunes junkie as well. I'm extremely OCD about having tracks organized, with all album artwork, and finally it does both for me. iEatBrainz helps as well.
For WMV I use the Flip4Mac plugin which is apparently now what MS prefers us to do.
I haven't found a need for anything else, and really I'm not interested in spending time installing codecs, finetuning quality, etc.. I just want to watch my videos in the same player with minor hazzle.
However, it seems to me that it's been crashing often lately.

Winamp & Windows Media Player (for WMA w/ licenses).
When at work, I use last.fm for their flash player.
Will have to give VLC a longer try!

iTunes on the Macbook.
iTunes on the MacMini.
iTunes on my PC.
And all my content sits on a lovely NASbox running FreeNAS which is fantastic.

By the way, I updated my Winamp (after beeing tired of closing the update popup for the 50th time) and the WMA license support does work now!
So media player will only be used for ... well you know what! :D

I'm a big fan of J. River Media Center but I also use VLC.
On a side note I just learned about KMPlayer and it looks pretty promising. Anybody else try it?

I use plain old boring Windows Media Player 11. I have installed some codecs for it so that more file types are compatible.
On occasion, I use goold old Media Player Classic.

I've recently discovered Songbird from Mozilla but it's still in beta testing and has some development glitches.
