You're missing out the best ever: Bin-Jip (3-Iron).
Truley amazing and totally different from most films around. So subtle, and so lovely.

These pop into my head, though if you asked me tomorrow it might look different:
Bloody Sunday
Ameros Perros
Yi Yi
Apocalypse Now Redux (cheating some)
American Splendor
Finding Nemo
The Widow of St. Pierre
One of the Hobbit flicks
Adaptation
George Washington
House of the Dead (okay, not really)

Being a Tolkien fanatic, I have to vote for the Lord of the Rings trilogy. I thought it was an excellent adaptation of the books.
As an aside, I saw somewhere not too long ago that Jackson may be doing The Hobbit sometime in the future.
